The Next Generation of Donut

Reviewed & written by Mollie Kent

Urban Legend has launched a new guilt-free donut shop, allowing us all to indulge responsibly!

I got the opportunity to savour what puts the ‘legend’ into this new pop-up and how they have flourished and tapped into an audience of tastebud enthusiasts who enjoy sweet-tasting treats without worrying about unhealthy options. To put this into perspective, one of their donuts has the same amount of calories as a slice of buttered toast.

Sounds too good to be true? It’s all down to science as the team set out to make outrageously good donuts using all-natural ingredients and colours.
The creators at Urban Legend set about turning the tide on sugar and fat, using natural ingredients found in melons, pears, roots and leaves as alternatives to sugar, with donuts steamed. The bold colours are taken from plant and vegetable extracts – purple from beetroot, yellow from safflower etc. Every product is free from artificial preservatives, colours or flavours.

I visited the launch of their shop in BOXPARK Croydon, which was shortly followed by another store at Clapham Junction. These following the successful launch of their first shop in Brighton!
Being located right outside Croydon BOXPARK, this is the perfect stop on date night when you’re craving some guilt-free dessert. I won’t give away all the flavours, but there is something for everyone. Whether that be the fruity ‘Berry Unbelievable’, with ripe blackberries and raspberries and a dark chocolate cookie crumble, which almost looks too pretty to eat. Or the ‘Choc Party’, with all the drizzles and a chocolatey cookie crumb confetti.

Overall, I loved the idea of enjoying a guilt-free treat and expect this will become a favourite with the rest of the Travel Dine Relax office. The donut experts have your sweet hit covered! Grab one iced donut for £1.95, or opt for a box of three (£5.65), six (£9.95), or twelve (£14.95) to share the love with friends, as the perfect accompaniment for get togethers as we come into party season.

Top 10 tips for barbecuing like a pro from Cornish chef James Strawbridge

With National Barbecue week around the corner (July 2nd – 11th) and the changeable weather taking a break (for now), many of us will be digging out our BBQs ready for a summer of gastronomy. While many of us will profess to be masters of the grill, some will be looking to avoid serving up burnt offerings or, worse still, undercooked health hazards. With that in mind, talented Cornish chef James Strawbridge has partnered up with online farm shop 44 Foods to share his top tips to ensure you’re barbecuing to perfection this summer. When James is not developing new recipes or directing photoshoots, he can be found foraging for wild food with his family or out at sea gig-rowing for his local club or painting the Cornish countryside.

Tip 1:

Cook over embers, not flames – be patient and wait for charcoal or wood to really burn down to achieve a strong constant heat to cook with. Once you have hot embers, it reduces the chance of flare-ups and gives you much more control on the grill.

Tip 2:

Veg power – try grilling vegetables over embers as the star of the show rather than just serving salads and veg kebabs on the side. Spring greens work really well, cauliflower steaks, radishes or peas in the pod can all be cooked in a grill basket.

Tip 3:

Low n Slow – have a go at a slow-cooked recipe this summer with some wood chips for a smokey flavour. Try your own beef brisket hot smoked down at 120˚C with an internal temp of 94˚C for 5-6 hours for an authentic tasting BBQ.

Tip 4:

Get down and dirty – try onions thrown straight onto the hot coals and cooked in their skins for 45 mins. Once blackened, slice in half to remove the sweet, tender onions from their charred outer layers and toss with parsley and butter.

Tip 5:

Chimney lighting – to avoid waiting till sundown to tuck into your BBQ, get efficient and buy a chimney to light your charcoal. They are really quick and easy to use and massively reduce the set-up time before you can start cooking.

Tip 6:

Don’t forget the mop – to avoid your food drying out, remember to baste, glaze or mop with a tasty BBQ sauce. Also, try adding a bowl of water into your BBQ oven if indirect grilling to keep your meat moist.

Tip 7:

Ole smoky – Add a handful of wood chips to your BBQ for a woody aroma and deep smoke ring. Try using apple, oak, hickory and cherry shavings.

Tip 8:

Probe safety – invest in a meat probe to keep an eye on the internal temperature of your food. They are really easy to use and help to understand what’s going on inside the BBQ.

Tip 9:

Burn baby burn – buy sustainably sourced charcoal to cook over rather than imported briquettes.

Tip 10:

Keep smiling – if you’re not smiling, then you are doing it all wrong! Enjoy cooking over fire this summer and be creative with your recipes.
To take the confusion out of choosing the right foods for your barbecue, James recommends trying a dedicated BBQ box from 44Foods

Thousands of marmalade jars pour in from around the world for the Marmalade Awards, despite lockdowns, new regulations and winter storms

In spite of a difficult year, marmalade makers have proven their resilience. Entrants have posted thousands of jars to Dalemain ready for the 2021 Marmalade Awards. Marmalades have arrived from around the globe – Japan, Australia, Canada and the Czech Republic are now all regular entrants, but this year’s competition has also seen arrivals from Kuwait, Honduras, Brazil and Zambia.

Marmalade making is a very personal thing, and this has been especially evident this year. Entrants have included messages and notes, and one Japanese marmalade maker even sent a jar with heart-shaped peel inside, and the wish that ‘marmalade will connect everyone’s hearts.’ Organisers have also been delighted to unwrap marmalade with knitted woolly hats, hand drawn labels and even, in one case, its own horse and carriage!

More time spent in the kitchen has also allowed entrants to be to be especially inventive, with homemade marmalade makers adding all kinds of new ingredients. Knotweed, gorse flowers, rowan berries and star anise have all been added to the citrus preserve, in the hope of standing out from the competition.

The Rathbones First Timers category has seen staff from their Kendal office don chef hats and get slicing with their families, hopefully sparking lifelong marmalade making obsessions! This category has been hugely popular this year, following a quiet winter of being ‘locked down’. One such entry comes from a teenager who spent January making marmalade to his gran’s recipe, instead of going on his planned gap year.

The judging has been delayed until it is safe to recommence, and organisers hope to announce the award winners on 20th June at Dalemain, as part of their annual Plant Fair. The winning marmalade recipe will be replicated by award-winning producers Thursday Cottage and sold at Dalemain and Fortnum & Mason’s, in their famous Piccaddily store.

Awards founder Jane Hasell-McCosh says: ‘We just weren’t sure how the Awards would go this year, and we have been blown away by our entrants, who have sent jars from all over the world. It really does mean so much to them, and to us. We cannot wait to get back to the judging, and find our winner!’

The Awards take place with the generous support of Fortnum & Mason, Rathbones, Armstrong Watson, Thursday Cottage and Lycetts.

Most expensive baking box of Christmas treats retails for £39,000

With just a month until Christmas, Britain Loves Baking, a direct-to-consumer baking box company which was established during the COVID pandemic, has unveiled the world’s most expensive baking box full of luxurious seasonal treats.

Costing £39,000, the box was dreamed up by the ex-director of food of Harrods and Selfridges, Bruce Langlands, and Michelin trained chef and Britain Loves Baking founder, Greg Wixted. It includes the recipes for 10 occasions throughout the season, including the ingredients to create showstopping centrepieces for Christmas Eve, Christmas Day and New Year’s Eve dinner parties, plus bakes for breakfast and treats, serving 6-8 to 12 portions per recipe.

The contents of each hand-crafted box includes everything required to create a real festive feast of decadent bakes, sweet treats, breads and desserts.

Some highlights include the South African coin the Krugerrand to add to your Christmas puddings instead of the traditional sixpence, a 40-year-old rare whiskey to soak your Christmas cake, and the ingredients for a Smoked Chocolate Whisky Cake using Rare Harvest New Zealand Manuka Honey which costs £1,200 per 250g.

To’ak chocolate is also included to craft your own chocolate Christmas house which sits atop of your Christmas Celebration cake (£900) and features a roof that hides mini Le Grand Louis XVI chocolates by Debauve and Gallais at £750 for 200g.

For breakfasts and lunches, there are all the steps to create Royal bread rolls using Veuve Clicquot La Grande Dame Rosé 2008 champagne and hand-milled Andalusian flour which blends 250 mg of gold dust for a crusty Golden Loaf and afternoon tea donuts filled cherry truffle and To’ak El Nino Harvest 2016 chocolate and a filling made from Sato Nishiki Cherries.

Speaking about the baking box, Bruce Langlands commented, “This baking box is essential for anyone who is a self-confessed foodie and is looking to bring true decadence to their Christmas festivities.”

Boxes are hand-delivered to any UK address and all the recipes and guides are included on a dedicated streaming tablet that comes included. Plus, buyers get 10-day access to a pastry chef and baker for 12 hours a day who can provide tips and suggestions! For those who want to forego this option, it can reduce the cost by £6,000.

Gingerbread County House Estates – image courtesy of Britain Loves Baking

The crowning glory of the baking box is the Gingerbread County House Estates gingerbread house. Available in four designs, the house comes complete with blueprints and is created by top architects and designers including contemporary artist Laura Harold, home designer and architect Paul Lyon, and cake decorator Jackie de Broise.

Langlands said, “Gingerbread houses are such fun and offer a real experience, especially this year, whether you are looking for a family activity, using the finished item as a focal point for seasonal décor or as the perfect gift for a foodie. I can highly recommend whichever option you go for. Have fun!”

Britain Loves Baking has gingerbread houses available from £39 to £150 for those who don’t want to splash out on the full baking box.
