Acme Fire Cult bring new wave live fire cooking collaboration with 40FT brewery to Dalston this April

From April, Acme Fire Cult, a new live fire concept from chefs Andrew Clarke and Daniel Watkins, will open its first permanent restaurant at 40FT Brewery in Dalston. A collaboration with Steve Ryan of 40FT, Acme Fire Cult offers a new approach to barbecue, where vegetables take centre stage and where food and drink are intrinsically linked; from using beer by-products such as yeast and spent grain to make ferments and hot sauces to using Acme’s favourite ingredients as adjuncts in beers, such as ancho chillies.

Acme Fire Cult began in the spring of 2021 after Andrew Clarke and Daniel Watkin’s successful summer residency at London Fields Courtyard in Hackney. Deriving from the Greek word akmē (the point at which something is at its best or most highly developed), the menu at Acme Fire Cult is an evolution of their London Fields Courtyard offering, but central to the collaboration with 40FT is the symbiotic relationship between the food and drink. The low waste menu will use beer brewing by-products to make ferments and sauces, such as their Acme ‘Marmite’, made from leftover beer yeast; Ancho hot sauce made with beer-soaked chillis, and beer molasses made by reducing down the ‘first runnings’ to be drizzled on desserts. Spent grain will be used for fermenting dish ingredients such as nukazuke pickles and even to make dog biscuits.

The restaurant will have ten beer taps pouring fresh beers brewed on-site that will be paired with dishes. Special edition beers will be brewed each month by 40FT to pair with the menu, with ingredients that will later be used in cooking. The first of these is Acme Dark Lager, a schwarzbier with a malt bill of chocolate and dark malts with subtle complexity from ancho chillies.

In addition to 40FT beers, there will be a concise wine list from Holly Willcocks (ex Noble Rot, now co-founder of Half Cut Market, Camden) and a cocktail menu to pair with the food with classic negronis and margaritas and beer-based cocktails like their Michelada built on the Acme Dark Lager with Acme hot sauce and fresh lime.

Vegetables will be at the heart of the menu, alongside rare and native breed meat from regenerative farms such as Lyon Hill Farm and Swaledale Butchers, plus dayboat fish from sustainable suppliers such as Fin & Flounder and Bethnal Green Fish, in supporting roles. At Acme, inspiration is pulled from around the globe, evident in their grilling and fermentation techniques, as well as their heavy use of chilli and spices. The constantly evolving, seasonal menu will feature small plates such as Grilled Leeks & Pistachio Romesco, alongside the likes of Beetroots with a sweet & sour dill dressing, beetroot purée, pickled blueberries and sorrel, which is cooked in the ‘first runnings’ of 40FT Brewery Sunset Hazy IPA. The sweet, malty, beet-infused juice is reduced down to a sticky molasses, which is then used to glaze the beetroot as they’re smoked and semi-dehydrated over birch wood. As at London Fields Courtyard, there will be a selection of flatbreads available, such as Coal Roasted Celeriac, Mushroom-Kelp XO, Coco Bean Miso and Salsa Verde made with foraged mushrooms and hand-gathered seaweed; Dorset Crab, Bone Marrow, Jalapeno Verde and Salted Cabbage and Smoked Shortrib, Mustard Greens, Beef fat Crema and Ancho Koij, where the Shortrib is glazed with a molasses made from 40FT Eccles Cake Stout. Large plates will include new dishes such as ½ Herb Fed Chicken with Vadouvan Butter, Tropea Onion and Crème Fraiche, alongside some favourites from their London Fields Courtyard residency, such as a ‘Char Siu’ of Monkfish, which uses a sweet and sour molasses of (by-product) fermented beetroot juice, then is dusted in fennel pollen, and served with roast Jalapeño verde and grilled sea vegetables. There will also be a reduced menu of small plates and flatbreads served at the 40FT Brewery taproom across the yard, which will also be available to takeaway.

The restaurant will be opposite the 40FT Brewery tap room, seating 50 covers inside and 60 outside on the covered and heated terrace. A large custom made grill and smoker will stand proudly in the covered yard, serving Acme Fire Cult flavours whatever the weather. Inside, the space is pared back and dark with industrial elements. A bar seats six, behind which pickles and ferments line the walls.

Acme Fire Cult’s signature plant-based sauces and condiments will also be available for sale at the Dalston yard and online, along with a range of merchandise such as t-shirts and branded hardware.

During March, there will be a limited, outdoor only, teaser ‘First Fires’ menu available, with the full menu available from 1st April.

Of the partnership, Andrew Clarke said: “Steve Ryan and I have been friends for a long time, and I’ve previously cooked at the brewery as a guest chef. Daniel and I had been looking for a space for Acme in Hackney, and when the space at the yard facing 40FT came up, we had to seize it. The potential for the space is huge, and we want special events and guest chef dinners to become a big part of the offering. We’re really excited to be working with

Steve and 40FT. The synergy of the beer brewing process and menu creation is central to what we’re doing at Acme and encompasses all aspects of the menu. We can’t wait for people to try it.”

The space will be open Wednesday – Sunday and is also available for private hire.

Chefs Simon Hulstone & Nigel Mendham to showcase kitchen-garden produce

‘British Bounty’: a one-night collaboration between Chefs Simon Hulstone & Nigel Mendham

Dukes London has announced that its much-loved restaurant, GBR (Great British Restaurant), will host a one-night-only dinner on 15th March 2022, a unique collaboration between GBR’s Chef Nigel Mendham and Chef Simon Hulstone of The Elephant in beautiful Torquay. Tickets are now available at £125 per person: the evening includes a welcome drink and a six-course tasting menu with wine pairing.

The Chefs will showcase their combined passion for the bounty of British kitchen-gardens and farms, highlighting much-loved local produce and with a one-off six-course menu that uses ingredients including elderberries, Devon clotted cream, Scottish langoustine and locally-sourced Beesands scallops. It is a sensational seasonal menu that will showcase the vibrant taste of Britain.

Chef Proprietor Simon Hulstone has been cooking professionally since his school days and is one of the UK’s most decorated chefs. In 2003 he won the Roux Scholarship and went on to win the Craft Guild of Chefs National Chef of the Year Award in 2008. He has twice represented the UK in the Bocuse d’Or, the world’s most prestigious culinary contest, and he captained the British team at the Culinary Olympics and Culinary World Cup in 2010 and 2012. With his team at The Elephant in Torquay, he has put the English Riviera on the culinary map, taking his first Michelin star in 2005 and maintaining it every year since. A champion of Devon and its produce, he has helped develop The Elephant’s 96-acre dedicated farm in Brixham, which supplies 70% of the restaurant’s vegetables and a wide variety of leaves and herbs as well as free-range eggs and Kelly Bronze turkeys.

Simon says, “it’s been far too long since I’ve been able to cook for guests outside of my restaurant, and I’m looking forward to showcasing a taste of Devon and the Elephant for guests at Dukes. The chefs and I are also looking forward to working with Nigel and his talented team to create a truly celebratory British menu.”

Chef Nigel Mendham was born in Norfolk and has always had a passion for Britain’s best produce, making use of the finest locally-sourced ingredients to create hearty British dishes with a twist. He is no stranger to playing a major role in the kitchen at some of the UK’s top restaurants and spent the early years of his career working in red star country houses around the British Isles – from the south coast to the Lake District, including the Lygon Arms, South Lodge, Stapleford Park and The Samling Hotel which held the Michelin Star for two years. The all-day dining concept of GBR takes Nigel’s philosophy on food back to its roots. Since taking over as Executive Head Chef there in 2011, he has made his mark on the competitive London dining scene with simple, elegant food prepared with traditional techniques to produce dishes that are refined and precise, balancing classic flavours with contemporary flair.

UK’s First Alcohol-Free Off-Licence Opens in London

Launching just in time for the most indulgent month of the year and running throughout Dry January, Mindful Drinking Festival creator, Club Soda, is opening the UK’s first alcohol-free off-licence just off Regent Street in London’s West End.

The pop-up store, which launched on 13 December, will give customers the chance to discover the wide range of alcohol-free drinks available in the UK and pick up a new favourite tipple to try throughout December, January and beyond. An Interview With : Sholto Smith

After visiting the Great Scotland Yard hotel we discuss plans, predictions, challenges and design and how general manager Sholto Smith uses his experience and love of travel to curate the perfect stay for hotel guests.

Firstly, great to see the Great Scotland Yard Hotel opening again. How did it feel to start welcoming back guests earlier this summer?

We looked forward to welcoming back Londoners and guests from further afield to experience the hotel, our extraordinary food and beverage venues and warm hospitality.
Now that London has reopened, we must focus on promoting London as a safe destination to visit and showcasing the attractions and things to do that are perhaps less crowded, to change the perception of London in the eyes of visitors from near or far. The city is what you make of it and the London experience doesn’t always have to be “metropolitan”. For instance, it actually has great green spaces and beautiful walks, many of which are just on Great Scotland Yard’s doorstep.

It’s been a challenging year for anyone within the hospitality sector, but the ability to adapt has been inspirational. How has the Great Scotland Yard team evolved to cope with the pandemic?
This past year has been an incredibly difficult year for hospitality as we found ourselves at the epicentre of the pandemic! We at Great Scotland Yard Hotel did manage to stay open throughout the most recent lockdown, even if at a limited capacity, and welcomed key workers and essential business travellers. This enabled us to keep as many team members as possible in employment during such a difficult and challenging time.

Taking a historic building and adapting it into a luxury hotel must have had its challenges. Were there any surprises along the way and how did the team incorporate and celebrate its past into the hotel we see today?

Great Scotland Yard is one of London’s most iconic addresses and is best known as the former headquarters of the Metropolitan Police. It also served as the London residence of the Scottish Royal Family, an army recruitment office, and The Ministry of Defence.

The hotel is housed in a magnificent 1820’s Grade II listed building with Edwardian & Victorian architecture. We were challenged to keep the soul of the building and to pay homage to its heritage. I feel we have created a space which invites guests to experience the history of the building through new eyes; a place where past and present merge; where history meets modern luxury. 

Transforming the building into a luxury hotel keeps the legend alive and allows us to open its doors to the public and share this building’s colourful past with guests from all over the world. Tasteful nods to the building’s past can be found in the interiors. Every nook and cranny has been carefully curated. Key symbols are featured several times in the guestrooms, encouraging guests to unlock the building’s secret past: robe hooks and the handles of the nightstands and minibar are all key-shaped. The blue-veneered guestroom doors are a reference to the police, as are the carpets which integrate elements of badges and uniforms to create a unique modern pattern.

Design and art are a key part of the hotel. Tell us more about the artworks and collections guests can see around the hotel.

Great Scotland Yard’s distinctive art collection was curated by Sarah Percy-Davis of Hollandridge Group. Pieces were commissioned from 28 artists, including Nicola Green, Cornelia Parker, and Alastair Mackie to name a few. Unusually for a hotel, there are bespoke pieces in each bedroom, as well as the public areas. The collection is valued at over £1m.

The collection captures the building’s rich history, with pieces representing crime, detection, and the justice system. The feature piece of the collection is “Service” by Nicola Green, which is a representation of the history of the criminal justice system in the UK. The piece consists of 30 portraits, from notorious criminals, judges, lawyers and politicians, to police, literary figures, and monarchs.

Criminal justice is not just about catching and punishing offenders, but also redemption and reintegration. Our fascinating collection takes a multi-layered approach and reflects all aspects of the system. We work with The Koestler Trust, a charity which promotes the arts in prisons and encourages ex-offenders to use art as a means to rehabilitation.

Who are the types of guests that stay at the Great Scotland Yard Hotel?

A Great Scotland Yard Hotel guest focus is on experiencing the city and engaging with its history, people, culture, and food. They wish to avoid the a-typical hotel experience, in search of a truly authentic individual experience, which celebrates exploration, creativity, and originality through storytelling and unique personalised experiences.   

What can guests expect when they arrive at the hotel and how does the team create unique and memorable experiences?

Experience is everything, experience is the new luxury. We pride ourselves on offering a unique and quintessentially quirky twist on a British classic. The team strive to create bespoke experiences for each guest.   Expect the Unexpected! 

The luxury stay sector has seen a rise in pre COVID years. How have the expectations of guests changed during your career, and how does the Great Scotland Yard Hotel adapt to an ever-demanding audience?

The modern traveller can be less loyal and in pursuit of the undiscovered and the unexpected. Hospitality experiences are no longer on your terms, it’s about delivering a strong narrative that enthrals and rewards the guest and their choice to live life on their own terms. This hotel is a one-off in every sense; a reimagined 5-star hotel. A one-off building, a one-off experience, a one-off chance to change the face of hotels from the cookie-cutter experiences that have come to define the sector. The ultimate reward for those who are independent free spirits and seek a non-hotel experience.

You’ve been a member of the Hyatt Group family for over thirty years. What have been some of your biggest achievements so far?

I would have to say being given the opportunity to open hotels like this one – Great Scotland Yard Hotel!  I mean, such a tremendous opportunity.  If I were to say anything else on this subject, then it would be the fact that I have been able to grow with the company, travel the world while working with some amazing people, learning from some great leaders and making many friends along the way!  

What or who inspired you to pursue a career within the hotel business?

Travel!  I like to travel and to see and experience new things, that and enjoy great service!  I am a bit of a stickler for things being done properly “The devil is in the detail!”  This works on so many levels!  

When you’re not overseeing the hotels day to day activities, how do you relax and what is your top holiday destination?

When I am not working I am more often than not in London!  I just love London and all it has to offer!  Be it great retail experiences, to window shopping!  The art galleries collectively house some of the greatest artists of all time, both past and present!  There is also the great architecture to take in to consideration too!  The other arts world – the kind that takes place on a stage – also what I like to try to get to see as much of as possible!  All world class and London is the centre of the universe when it comes to this!  

In terms of my top holiday destination – I do not really have one!  I am more a city person than resort, albeit that is not to say that I do not enjoy or relish times in the tropics!  I certainly do!!

If you could have given your younger self any advice at the start of your career, what would it be, and why?

If I was to answer that question then it would make me look like I look back thinking if I could have done something different or differently, which is not something that I would do.  I like to think that I have made the best of opportunities that have been presented to me and for that matter; the ones I have created I feel I have also made the most of those.  I prefer to look forward and to what’s around the corner!  

If I were to give advice then it would be to say that when opportunity knocks, open the door and take it!   Also, it’s very good to listen and to observe!

The Footman in Mayfair undergoes stylish refurbishment

The Footman Mayfair welcomes back guests following an elegant and stylish refurbishment to modernise the popular pub and restaurant while keeping its original charm.

Following the refurbishment, The Footman now has clearly defined zones on each floor to separate drinking and dining, with the upper floors available for exclusive private hire. The first-floor dining room seating area has been re-arranged to give guests more privacy. The entire floor has been refurbished, with elegant, warm and earthy tones, a bold new ceiling detail and classic parquet flooring. The stylish reupholstered seating in a subtle yet chic pattern brings the new décor together under softer lighting from brand new fixtures.

Completing the dining area redesign, The Footman’s sommeliers have been tasting new world, old world and fine wines to create an offering that will tantalise the taste buds of any connoisseur. The team look forward to inviting guests to try delicious wines and British seasonal dishes created by Stuart, Head Chef and flavour extraordinaire.

On the second floor, The Footman now offers a flexible space doubling as a restaurant and lounge. While the exposed brick styling remains, the floor has been updated with marble and brass detailing, adding decadence to any private event. For the dining space itself, the seating has been replaced by new leather and fabric chairs, which sit on brand-new timber flooring.

Ascending to the third floor brings guests into The Footman’s most exclusive space, the private club house board room. A classic mix of warm tones and blue and walnut timber, the room is styled with brass accents and opaque glass pendants suspended from a bold panelled ceiling.

A large table is the centrepiece of the space, with a television discreetly hidden behind a decorative housing, giving the room an additional function as a corporate meeting space with break out areas. At the end of the room, a statement dresser acts as a bar, providing guests with an attentive and tailored experience for the duration of any private event, meeting or team event.

Aside from the main bar and dining space refurbishments, the functional spaces of The Footman have also been stylishly updated. The staircase connecting each floor leads guests through the pub, tempting them to explore beyond the main bar area. Artwork is clustered along the staircase walls, contrasting with the lighter wall colours that brighten the space.

The bathrooms in The Footman have also been updated, retaining the building’s classic roots with beautiful Victorian tiles, complimented with marble vanity units and the addition of brass detailing, creating a luxurious feel of the space.

Ronnie Scott’s launches comedy brunches

Launching on Saturday 17 July with co-host of hit ‘Off Menu’ podcast: Ed Gamble

This month Soho institution, Ronnie Scott’s, is doing something a little different.

Launching the inaugural Saturday Comedy Brunch at Ronnie Scott’s, where for the month of July, audiences can start their day with full bellies and belly laughs. Famed for unrivalled entertainment, good times aplenty, and the very best UK artistry – Ronnie’s is the place to get your cultural fix this month. 

New for July 2021, the Saturday Comedy Brunches kick off with the one and only stand-up comedian Ed Gamble (17 July). Supported by BBC New Comedy Award winner Janine Harouni and the BBC Comedy Award shortlisted Chloe Petts. In the intimate jazz setting, with low-lighting and ambience abound, Ronnie’s is hosting some of the funniest quipsters in town, entertaining audiences alongside a full cocktail brunch. Tickets include two courses from the delicious brunch menu as well as two cocktails from Ronnie Scott’s renowned cocktail list – think Mimosas, Bloody Marys and more. Tickets start from £55, and guests are invited to book for sips and giggles each Saturday in July, with headliners on 24 and 31 July to be announced!

Ronnie Scott’s Saturday Comedy Brunches will be held every other month, alternating with All That Jazz! Saturday Cabaret Brunches – featuring star performers of the West End shows performing everyone’s favourite theatre and jazz standards in the heart of Soho. 

And for the night-owls, Ronnie Scott’s continue their evening shows, playing host to some of the UK’s finest musical talent: from jazz and soul to funk, Afrobeat and more. July’s headliners include the likes of the James Taylor Quartet and Horn Culture costing just a tenner a ticket! There’s truly something for everyone. For those who can’t make it down to Soho, fear-not – they’re collaborating with DICE.FM, live streaming the very best shows to audiences globally, for a fraction of the ticket price.

Cirque Berserk! Back in the West End

Britain’s biggest theatre-circus spectacular, Cirque Berserk!, brings its record-breaking show back to London’s West End, at The Garrick Theatre from 25 August – 11 September 2021.

The hair-raising and hilarious Cirque Berserk! celebrates its return to the stage, following the cancellation of its performances in March last year due to lockdown restrictions. Combining contemporary cirque-style artistry with adrenaline-fuelled stunt action, the 2021 show features audiences’ favourite Berserk! acts from around the world plus some thrilling new ones. 

A unique collaboration between classical circus artists, some from tenth generation circus families, and a theatrical creative team, Cirque Berserk! is the UK’s biggest and most diverse full-scale circus production created especially for proscenium-arch theatres.

This astoundingly talented international troupe features over thirty acrobats, aerialists and daredevil stuntmen showcasing the finest in traditional circus thrills and skills, including the legendary high-speed motorcycle ‘Globe of Death’. 

The company has performed throughout the UK and internationally and is a regular must-see at Hyde Park’s Winter Wonderland and the Edinburgh Festival Fringe, where it has established itself as the Fringe’s best-selling show of all time.
